Confession #1: I am not a live on the side of danger and make amazing food from nothing kind of person. I follow recipes pretty much to the T!
Confession #2: Strange ingredients that I've never heard of before SCARE me to death...okay, not to death but I do avoid them like the plague. That is until someone makes something I love and they give me the recipe AND tell me where to get that strange ingredient. I had NO IDEA what Kale was till a few years ago when I was introduced to the fabulous Zuppa Toscana Soup. Embarrassing...I know.
Confession #3: I LOVE, LOVE, LOVE...Mel's Kitchen Cafe! I'll be honest, I wish Mel was my neighbor who loved making food for her neighbor...me being that neighbor! I bet my husband secretly wishes that too! I feel like I know Mel, which I don't really, I've never actually met her, but that's just a technicality! She is my soul food sister. I just know it!
If you haven't ever visited her blogy blog...click on the link above and take a looky look! Her recipes are fabulous! Over time I will share our families favorites that we've tried! It doesn't fail that I will make something when we have someone over for dinner and I will say...Oh It's Mel! Mel's Kitchen Cafe! I've been told I am a good cook...oh on the contrary. I'm a good recipe follower!! That's it. Nothing more, nothing less. Now Mel, she is fabulous because she fits so much of my criteria for cooking!
1) Must be family friendly. I have five littles to please and gourmet just isn't on the menu.
2) Must not have anything that has an ingredient that has to be purchased at a specialty food store I've never heard of. Don't get me wrong, I like the Food Network, but please...I don't know half the ingredients and don't live anywhere close to said specialty food stores. It's just not happening.
3) Must not include any type of alcoholic beverage. I get the fact that "most" of the alcohol is cooked off while baking, but let's be honest...I don't want to be buying it at the store and make anyone think I drink it. I'm not judgin...just not for me. I just know I would run into someone I know and there would just be no words...no words (because I would be passed out on the floor with embarrassment...even though it would be for cooking). Enough said.
4) Must not take all day to make! Remember those cute five littles I have...yep!
Mel's recipes fit me to a T! So thank you Mel, for rescuing my family! They love the food and I have the satisfaction of knowing I made it! Win, Win! If you are in a cooking rut, which I'm in most of the time, go try out some of Mel's fabulously amazing recipes! You won't regret it!

Thai Chicken Crunch Wraps...Yum (Click it...you know you want to!)
These are so easy and seriously the best fresh tasting wraps. I requested them for Mother's Day dinner, they are that good! I leave out the cilantro (not a fan) but the rest I follow to the T! Seriously friends, it's a must try! What I love about these wraps is that you can have them for "leftovers" for lunches and dinners till all the ingredients are used up and it tastes fresh every time! I always make more than what the recipe calls for because I want leftovers! They really are that good!
I took pictures of my finished version but I just realized that I haven't unloaded them off my camera! Oops! So for now, feast your eyes on Mel's version! Try them...YUM!
